Beets were definitely NOT my favorite food when I was a kid. For some reason, more recently, I have learned to love them. In salads, juiced (with other veggies and Granny Smith apples, grilled, boiled, or roasted. Beet soup, such as borscht, was probably ‘invented’ in Eastern Europe and is a popular dish that has emigrated to North America.
